A quick dinner for less than $14

pizzahomemade.jpgMaking pizza and salad is one of my favorite dinners when I want to cook dinner very quickly. I can usually get it on the table in 30 to 40 minutes, start to finish, and there is enough to feed four. It's also a cheap meal. Here's the grocery list and prices from Trader Joe's.

Bag of herb salad greens: $2
Two bags of pizza dough: $2.60
Fresh mozzarella: $3
Salami roll: $3
Green peppers: $2
Can of diced tomatoes: $1.29
Spices from your cupboard
Cornmeal from your cupboard

I also used garlic and half an onion that was in the fridge. Other toppings will change the price, obviously.

Heat oven to 425 and put the dough...

...on the oven so it can quickly come to room temperature. It's much easier to stretch out this way.

Slice cheese, peppers and onions very thinly so they cook quickly. Dice garlic, cut salami (I like hand cut, which is thicker than store cut, because the flavor doesn't cook away in the oven).

For the sauce open the can of diced tomatoes, pour into a bowl and mix in a teaspoon each of parsley, basil, oregano and garlic salt. I add a few shakes of dried red pepper, too. If you are not putting meat on the pizza consider adding a small amount of regular salt.

Shake a tablespoon or two of cornmeal onto the tray or pizza stone. Smoosh the dough into a round shape, letting the edges stay a tad thicker to make a chewy crust. Add a half cup of sauce and spread around. It will look thin but if you add too much the pizza will be watery. Spread toppings around, including cheese.

Put in oven and bake for 14-18 minutes. While the pizza is cooking I wash the lettuce and top with whatever salad fixings I have (peppers/carrots/mushrooms or nuts/dried cranberries/apple slices). Take the pizza out when the cheese is browned and bubbling. Cut and eat immediately.
