Chocolate cake in five minutes
(not my actual cake, but pretty darn close) Here is a recipe for "5 minute chocolate cake." If you are asking yourself how this helps you save money, making this recipe is cheaper than buying cake and is a fun activity for kids. Cheap entertainment that yields food = no brainer.
The ingredients include:
1 coffee mug
4 tablespoons flour (that's plain flour, not self-rising)
4 tablespoons sugar
2 tablespoons baking cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
small splash of vanilla
Directions: add the dry ingredients to the mug and mix well. Add the egg and mix thoroughly. Pour in the milk and oil and mix well. Add the chocolate chips (if using) and vanilla and mix again. Put your mug in the microwave and cook for 3 minutes at 1000 watts. The cake will rise over the top of the mug, but that's okay. Allow it to cool about two minutes, then wiggle onto a plate and...
...eat. Makes enough for two.
It took me 4 minutes and 40 seconds to get the batter into the microwave, sans chocolate chips, which I decided against. After three minutes of cooking and two minutes of cooling I was eating cake.
Unfortunately, it did not taste like the rich, fluffy chocolate cake I am used to. It was not terrible - I ate half of it - but it had a spongy texture and mild chocolate taste. Leaving out the chips was a mistake.
I am out of cocoa powder so I can't attest to the revised version below. But I bet it will improve the flavor. The spongy texture, I suspect, comes from cooking it in a microwave.

This "recipe" has been making the rounds for quite a while. I haven't tried it, as I'm a confirmed brownies baker. However, I have sent it to chocoholic friends, who say it will do in a pinch when cravings are out of control. The chocolate chips (preferably semi-sweet dark chips) are a must! A dollop of dark chocolate syrup also helps (a squeeze or a tablespoon of hot fudge topping). Just don't make it too liquid-y, or you'll have a messy pudding concoction.
There's a similar cake you can buy at Trader Joe's. You can make single servings. It's in a pink box. (Can't remember name.) You add a big spoonful to some fat free vanilla yogurt...I think that's all. Cook in microwave for about 30 seconds. Pretty good and fast when you're craving chocolate!
The mix at Trader Joe's is called No Pudge Brownie Mix. Very, very good and chocolatey.
