Parliament Chocolate, the latest from the mastermind behind à la minute, will celebrate its grand opening this weekend (December 14 and 15).
Just as with à la minute, the focus is on simple quality. Parliament raises the bar by using only two ingredients in its chocolate: High quality cacao and organic cane sugar.
The shop opened December 1 and has been open Saturdays and Sundays since then.
Regular hours will be from noon to 5 p.m. Thursdays through Sundays.
Parliament’s chocolate maker is à la minute’s chef/owner Ryan Berk, and its head chocolatier is Matthew Falstreau.
Earlier this year, the pair trekked to Central America to find a source for their cacao. They’re currently making a bar using cacao from a farmers’ co-op in the Dominican Republic.
The grand opening will feature the company’s confections and baked goods created with the company’s chocolates from the soon-to-be-defunct Sugarbird Desserts.
There will also be live music and wine and beer from the Dregs on Saturday, and on Sunday, there will be a special five-course wine and chocolate pairing Central American cuisine dinner at Lounge 22.
The dinner is $100, with proceeds benefiting Guatemalan cacao farmers. For reservations, call 909-793-1593.
