Knuckle dragging is a reference to ape-like quality of a person. It is a common racist phrase against African-Americans, particularly athletes. Chuckles is claiming he isn’t being racist because he used the racist epithet against both an African-American (Dedmon) and an Egyptian (Oraby). It’s an awfully weak defense.
